In late 2019, local native Finn Walter made his way back to the LBK to open his own restaurant, The Nicolett. Named after a historic hotel in downtown, this restaurant pays tribute to its history in more ways than one. In fact, Chef Finn acquired the property from a former landscape architect who lived and worked in the space. Today, you will find the original kitchen sink still in its rightful place behind the bar. As you make your way around the building, a gorgeous greenhouse becomes the focal point of the evening; that is until you taste the food. A structure she once used to grow succulents is now a romantic dining spot draped with greenery and twinkle lights that is available for reservations. One bite into Chef Finn’s food will leave you speechless. A James Beard Award Semi-Finalist for Best Chef: Texas, Finn uses local Texas High Plains ingredients – some of which are located right outside the kitchen door – and cooks his dishes to perfection using techniques he learned during his time training in restaurants around the world.
