Every morning, owner Jenna Lay and her crew churn out five new cupcake flavors, made from scratch of course. With more than 50 original recipes at her fingertips, each day is truly a sweet surprise. Lay is passionate about using only the freshest and finest quality ingredients: sweet creamy butter, fresh eggs, confectioner’s sugar, thrice-sifted flour (because according to Lay, twice is just not enough), Madagascar vanilla, gourmet chocolates, fresh fruits and fine nuts. Lay is especially proud of the fact that they never use additives or preservatives so her customers can truly be at “Peace.”
Flavors span from the basics to the Elvis Presley, a heavenly combination of banana, chocolate and peanut butter, and my personal favorite and No. 1 bestseller, Red Velvet. Cupcake fans should keep close tabs on the Peace O’ Cake Facebook page to learn of the five flavors being offered that day. For those that prefer to plan their indulgences out, Lay posts the full week’s offering at www.peaceocake.com.
Aside from serving regular-sized cupcakes, Lay also offers a mini version, ideal for the health conscious or for those that prefer to try one of each flavor. I suggest the latter option. Trust me, it will make your day that much sweeter.
